Ingredients:
CAN OF CANNELINI OR NAVY BEANS, drained & rinsed
CAN OF ARTICHOKE HEARTS, drained & rinsed
GARLIC, 1 peeled & chopped clove, more to choice
FRESH LEMON JUICE, 2 Tbsp
optional- FRESH ROSEMARY, chopped 1 Tbsp
OLIVE OIL, 2 Tbsp
CAYENNE, to taste
KOSHER SALT & PEPPER, to taste
Quick Artichoke White Bean Dip
Directions:
1. In a food processor, blend the beans, artichoke hearts, garlic, & lemon juice to a smooth paste. With machine running, add 2 tablespoons of olive oil. If needed, add 1-2 tablespoons of water to get a smooth consistency.
2. Blend in rosemary with salt and pepper in processor.
3. Transfer to bowl, and optional: sprinkle w/two generous pinches of cayenne & drizzle with olive oil. Shown in picture with everything bagel seasoning.
4. Can be served many ways. With Salad, pita bread, crudites, crackers, and/or tortilla chips, etc.
