Ingredients:
FRESH FAVA BEANS, 
SWEET ONION, chopped
GARLIC 5 cloves, chopped
FRESH PARSLEY 1 bunch, chopped (1 cup)
FRESH CILANTRO 1 bunch, chopped (1 cup)
FRESH LEMON JUICE, to taste
SALT, to taste

Egyptian Bessara Dip

Instructions:

1. Place FAVA BEANS in a sauce pan with enough WATER to cover and boil. Bring to a simmer, when froth appears on the surface, drain the beans and add new water to cover the beans, bring back to a simmer.

2. After simmering for 5 minutes, add the CILANTRO, PARSLEY, ONION and GARLIC and let the beans simmer some more until they are completely soft .

3. Drain, reserving some of the water. Transfer the simmered ingredients + LEMON JUICE & SALT to the bowl of a food processor and purée.  Add a little of the reserved water if it helps consistency for mixing purée. 

4. Serve with pita or tortilla chips.
