Ingredients:
OLIVE OIL SPRAY
4-8 EGGS depending on baking dish choice and crowd
5-10 thin ASPARAGUS SPEARS, diagonally-cut into 1.5" pieces
2-4 Tbsp PARMESAN CHEESE, shredded
SALT & PEPPER to taste
Parmesan Asparagus Egg Bake
Instructions:
1. Preheat oven to 400F/200C. Set up small casserole or individual serving baking dishes and spray with OLIVE OIL.
2. Break EGGS into 2 individual or small casserole dish(es) and set aside.
3. Cut woody bottom ends off ASPARAGUS and cut remaining into 1.5" pieces. Then even disperse asparagus in with prepared egg. Place in oven for 10 minutes.
4. Remove from oven and sprinkle PARMESAN on top. Place back in oven for 3-4 minutes until cheese is starting to melt and look delicious.
5. Serve & season to taste with SALT & PEPPER.
