Ingredients:

SPAGHETTI SQUASH, COOKED, up to 4 heaping cups of leftovers
BUTTER or COCONUT OIL, to fry
SALT & PEPPER, to taste

SPAGHETTI SQUASHBROWNS

Instructions:

1.  Pull SPAGHETTI SQUASH into string forms with fork.  Wring out as much moisture from leftover SPAGHETTI SQUASH as comfortably possible - this is what helps them get beautifully golden when frying.

2.  Make into desired patty like shapes.

3. Heat skillet, preferably cast iron, to medium high heat.  Add enough BUTTER OR COCONUT OIL to generously coat skillet.  Once fat warms to suitable frying temperature, gently place patties in pan - press down a bit with spatula to help sear them golden.  Gently flip over to cook other side of patties to achieve golden layer on both sides.

4. Remove and season with SALT & PEPPER.

5. Serve and enjoy!
