Ingredients:

OLIVE OIL
HOT ITALIAN SAUSAGE, 1 lb ground
RED ONION, chopped
GARLIC CLOVES, peeled, 5-10 cloves - to taste
TUSCAN or ITALIAN SEASONING - 1 TBSP
RED CHILI FLAKES, a couple pinches - to taste
SALT, to taste
CHICKEN BROTH, 10 cups - to taste
GOLD POTATOES, 5 lbs cubed
TUSCAN/DINO/LACINATO KALE, 1 bunch - de-stemmed & chopped into approx 1" pieces
HEAVY CREAM, 1 pint
LEMON JUICE, 1-3 TBSPNs - to taste
FETA or PARMESAN, light sprinkle for garnish
SALT & PEPPER, to taste for garnish

Zuppa Toscana

1.  In large soup pot, drizzle a couple tablespoons of OLIVE OIL in heated pot. Add SAUSAGE & ONION, sauteeing and stirring.

2. Once the sausage starts to brown beautifully and the onions start to turn translucent, add GARLIC CLOVES & SEASONINGS and stir for 30 seconds.

3.  Add BROTH & POTATOES and bring to boil. Cover and reduce & let simmer for approx 25 minutes, until potatoes are tender.

4.  Stir in KALE, CREAM, & LEMON JUICE. 

5.  Garnish with Feta/Parmesan and Serve.
