Curries
Easy Chickpea Curry
Serve over steamed BASMATI RICE.
Curry:
2 tablespoons OLIVE OIL
1 RED ONION, diced small
4 cloves of GARLIC, thinly sliced
1 teaspoon SALT
1 tablespoon CURRY POWDER
1 can of DICED TOMATOES – fire roasted recommended
4 cups of BROTH of choice
2 cans of CHICKEAS, drained & rinsed
1 can full fat COCONUTMILK
Garnish:
LIME slices, chopped CILANTRO, & thinly sliced RED ONION
Aloo Matar
POTATOES 3, large, washed and scrubbed (do not peel)
1 lb TOMATOES, washed & cut an 'X' on top of each
1/2 cup GREEN PEAS
1 tsp CUMIN SEEDS
1/2 tsp TURMERIC POWDER
1 tbsp RED CHILI POWDER (adjust to preference)
2 tbsp OIL
SALT to taste
